Chicken Karahi 2

Chicken Karahi ... A traditional Pakistani curry; chicken cooked with tomatoes, yogurt and spices. This recipe is completely different from the Chicken Karahi I posted earlier!

Chicken Karahi
*****************
Serves : 3 - 4

Ingredients :
  • 1/2 kg. chicken, cut into medium pieces
  • 1/4 cup oil
  • 1 medium onion, finely chopped
  • 1 tbsp.  ginger & garlic paste
  • 2 to 3 green chilies, finely chopped
  • 375 gm.  ( 4 medium sized ) tomatoes, finely chopped
  • 1/2 cup natural yogurt, whisked
  • 1 tbsp.  coriander seeds, crushed / coarsely ground
  • 1 1/2 to 2 tbsp.  red chilli flakes
  • Pinch of nigella seeds ( kalonji )
  • 1 tsp.  salt ( or according to taste )
  • 1/2 tsp.  turmeric powder
  • 1 tsp.  cumin seeds, freshly ground
  • 1 tsp.  dry fenugreek leaves ( kasuri methi )
  • 1 tbsp.  finely sliced ginger
  • 1 tbsp.  fresh coriander leaves, chopped
  • 1 tbsp.  butter or Ghee ( clarified butter), optional

Method :
    • Heat oil in a deep pan or wok ( karahi ).
    • Add onion and ginger garlic paste. Stir-fry for 2 minutes until onion has softened.
    • Now add chicken in it. Stir-fry until chicken is no longer pink.
    • Add next 9 ingredients and mix well.
    • Cover with the lid and cook on medium heat until chicken is tender ( Keep stirring occasionally, so the mixture doesn't stick to the pan ).
    • Now cook on high flame, stirring constantly until all the liquid dries up & the oil separates.
    • Add remaining ingredients; mix well & cooked covered for 5 minutes on very low heat.
    • Chicken Karahi is ready to serve with Naan or Chapattis.
